Paneer Tikka

Originating in North India, Paneer Tikka has become a global favourite due to its delicious flavour and ease of preparation. It is a popular Indian starter made by marinating cubes of paneer (Indian cottage cheese) in a spicy yoghurt mixture, skewering them with veggies, and grilling them in a tandoor (clay oven) or an oven.

Ingredients:

  • Paneer (Indian cottage cheese)
  • Hung curd (strained yogurt)
  • Ginger-garlic paste
  • Garam masala
  • Red chilli powder
  • Turmeric
  • Kasuri methi (dried fenugreek leaves)
  • Lemon juice
  • Bell peppers, onions, and other veggies (optional)
  • Skewers

Step 1: Prepare the marinade

  • In a mixing bowl, combine hung curd, ginger-garlic paste, garam masala, red chilli powder, turmeric, kasuri methi, lemon juice, and a pinch of salt.
  • To create a smooth marinade, properly combine all of the ingredients.

Step 2: Prep the Paneer and the Veggies

  • Chop the vegetables into uniform-sized pieces and cut the paneer into cubes for skewering.

Step 3: Marinating

  • Apply a generous layer of marinade to the paneer and vegetables, making sure they are entirely coated.
  • To let the flavours seep in, place the marinated paneer and vegetables in the refrigerator for at least half an hour.

Step 4: Skewering and Cooking

  • Skewer the marinated paneer and vegetables on skewers in alternate directions.
  • Preheat the oven or grill to high heat.
  • Grill the paneer tikka and vegetables till they get a nice golden brown colour and are thoroughly done. To ensure even cooking, turn them occasionally.

Step 5: Presenting

  • Top the Paneer Tikka with a sprinkle of chaat masala and fresh coriander.
  • Serve with mint chutney, lemon wedges and freshly sliced onion for added flavours.
