Vegetable Spring Roll

  • Cornstarch mixed with water (as a sealant)
Step 1: Prepare the Filling
  • In a pan over medium heat, heat a single tablespoon of oil.
  • Sauté the garlic and ginger until aromatic.
  • Stir in the diced onion slices until they are transparent.
  • Add the shredded cabbage, carrots, bell peppers, and bean sprouts and toss to combine them.
  • Stir-fry the vegetables until they are slightly softened but still crunchy.
  • Season with soy sauce, salt, and pepper to taste. Place aside to cool.
Step 2: Rolling the Spring Rolls
  • Place a spring roll wrapper in the shape of a diamond on a clean surface, with one corner pointing towards you.
  • Fill the wrapper with a tablespoon of the vegetable mixture.
  • Fold the nearest corner over the filling, tuck the sides in, and roll tightly.
  • To keep the rolls from opening while frying, seal the edges with the cornstarch-water mixture.
Step 3: Frying the Spring Rolls
  • Heat the oil in a large frying pan or wok. Make sure to check that the oil is hot but not smoking.
  • Place a few constructed spring rolls at a time in the hot oil, without crowding the pan.
  • Fry until golden brown and crispy, rotating on a regular basis to ensure even cooking.
  • Using a slotted spoon, remove the spring rolls and set onto tissue paper to drain excess oil.
