Andhra Fish Fry

Ingredients:
  • 500g fresh fish fillets (such as kingfish or tilapia)
  • 2 tbsp. red chilli powder
  • 1 tbsp. ginger-garlic paste
  • 1 tsp. turmeric powder
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 2 tbsps. rice flour
  • Salt to taste
  • Oil for shallow frying
  • Curry leaves for garnish
  • Lemon wedges for serving

Step 1: Preparation

  • Fish fillets should be cleaned and pat dried before cooking.
  • Clean and pat dry the fish fillets before cooking. Make shallow cuts on both sides after cutting them to the appropriate sizes.

Step 2: Marinating

  • Combine red chilli powder, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, rice flour, and salt in a mixing bowl.
  • Make sure the fish pieces are thoroughly coated by applying this marinade.
  • Allow it to marinade in the refrigerator for a minimum of 30 minutes.

Step 3: Shallow Frying

  • Heat oil in a pan over medium heat for shallow frying. Put the fish pieces that have been marinated into the heated oil gently.
  • Fry till golden brown and crispy on all sides, making sure the fish is well cooked.
  • Depending on the thickness of the fillets, this usually takes 5 to 6 minutes per side.

Step 4: Garnish and serve

  • Drain excess oil from the fried fish on a platter lined with paper towels.
  • Top with freshly chopped curry leaves and serve warm, accompanied by wedges of lemon.
