Hara Bhara Kebab

Hara Bhara Kebab is a mouth-watering vegetarian appetiser created by India's rich culinary tradition. Ingredients:

  • 2 cups spinach leaves (blanched and chopped finely)
  • 1 cup boiled green peas
  • 2 large boiled potatoes (mashed)
  • 2-3 green chillies (finely chopped)
  • 1-inch ginger (grated)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1 teaspoon chaat masala
  • 2 tablespoons corn flour
  • 2 tablespoons breadcrumbs
  • Salt to taste
  • Oil for shallow frying

 

Step 1: Blanch and chop Spinach

  • To begin, blanch the spinach leaves in boiling water for 2 minutes before transferring them to ice-cold water.
  • Squeeze excess water from the blanched spinach and finely chop it.

Step 2: Mash Potatoes and Peas

  • Combine the mashed potatoes and boiling green peas in a mixing basin. Mash them up until well combined.

Step 3: Prepare spice mix

  • To make the spice mix, heat a teaspoon of oil in a pan and add cumin seeds, allowing them to sputter. Grate the ginger and finely chop the green chillies.
  • Cook for a minute and a half. To the potato-pea combination, combine this spice blend, garam masala, chaat masala, and salt. Combine thoroughly.

Step 4: Add Spinach and Binders

  • Incorporate Spinach and Binders Stir in the finely chopped spinach. Corn flour and breadcrumbs are used to bind the kebabs.
  • Mix until the mixture resembles dough.

Step 5: Shape the kebabs

  • Form the Kebabs, Divide the ingredients into equal pieces and shape into flat oval or circle-like patties, as preferred.

Step 6: Shallow Fry

  • Heat some oil in a non-stick pan for shallow frying. On medium heat, shallow fried the kebabs until golden brown and crispy on both sides.
  • For a healthier version, use less oil or air fry them.

Step 7: Serve Hot

  • After cooking, take the kebabs out of the pan and lay them on absorbent paper to drain any extra oil before serving hot. Serve with mint chutney or sour tamarind sauce, if desired.
