Vegetable Seekh Kebab

Veg Seekh Kebab is a spicy and seasoned kebab made mostly of mixed veggies, paneer (Indian cottage cheese) and an assortment of aromatic spices. The term "seekh" refers to the skewers that are usually used to form these kebabs before they are cooked. Each bite has a pleasing crunch on the outside and is moist and delicious on the inside.

Ingredients:

  • Vegetables: 2 cups grated mixed vegetables (carrots, peas, potatoes, bell peppers)
  • Paneer (Indian cottage cheese): 1 cup, grated
  • Bread Crumbs: 1/2 cup
  • Besan (Chickpea Flour): 2 tablespoons
  • Ginger-Garlic Paste: 1 tablespoon
  • Spices: 1 teaspoon each of cumin powder, garam masala, coriander powder
  • Chopped Green Chillies: 2 teaspoons (adjust according to spice preference)
  • Fresh Coriander Leaves: 2 tablespoons, finely chopped
  • Salt: To taste
  • Skewers: Pre-soaked in water (if using wooden skewers)

Step 1: Prepare the Vegetables

  • Combine grated mixed vegetables, grated paneer, and bread crumbs in a mixing basin.
  • Add the fresh coriander leaves, chopped green chillies, besan, ginger-garlic paste, cumin powder, and coriander powder, along with salt to taste.

Step 2: Kneading the Mixture

  • Make sure that the spices and binding agents are distributed evenly throughout all of the ingredients by thoroughly mixing them.
  • Mix the ingredients together thoroughly until the mixture resembles dough and can be held together.

Step 3: Shape the Kebabs

  • Shape a tiny bit of the mixture onto the pre-soaked skewers into cylindrical or elongated kebabs.
  • To prevent the kebabs from falling apart while cooking, shape them tightly.
Step 4: Cooking Methods
  • Grilling: Preheat the grill or oven to medium-high heat. Brush the kebabs with oil and place them on a greased grill or baking tray. Grill for about 15-20 minutes, turning occasionally until they turn golden brown and evenly cooked.
  • Stovetop: Heat a non-stick pan with some oil. Place the kebabs on the pan and cook over medium heat, rotating them to ensure even cooking. Cook until they attain a golden-brown colour on all sides.

Step 5: Serving

  • Once cooked, remove the Veg Seekh Kebabs from the heat.
  • Serve hot with mint chutney, onion rings, and lemon wedges for a delightful burst of flavours.

Veg Seekh Kebabs are a delightful addition to any gathering, whether as a starter or a side dish. These flavoursome kebabs are sure to tantalize your taste buds with their rich and aromatic blend of spices.
